201 is chrome-nickel-manganese austenitic stainless steel, his sex ratio is high, in some occasions can replace 304.

 18/10 refers to chromium-nickel stainless steel, that is, austenitic stainless steel, containing 18% chromium and 10% nickel.

304 is austenitic chrome-nickel stainless steel, the main composition is 0Cr18Ni9 or 0Cr18Ni10, belongs to the replacement of 321 stainless steel model, but does not contain titanium, more civil consideration; 316L is ultra low carbon austenitic chromium-nickel-molybdenum stainless steel, the main component is 00Cr17Ni14Mo2, hardness is lower than 304, wear resistance is slightly worse, but intercrystalline corrosion resistance is strong, can be applied to contain a small amount of chloride ion and other harsh acidic conditions, mainly for the chemical industry, not suitable for use in civil products, in contact with iron and other processes, Surface scratch will cause carburizing, rust, affect the appearance and corrosion resistance.

420 is martensitic stainless steel. This kind of steel is in the Y phase zone at normal quenching temperature, but their Y phase is only stable at high temperature, and the M point is generally around 3OO℃, so it is transformed into martensitic during cooling.  This kind of stainless steel can be hardened by heat treatment.
